Baked Alaska – Christmas Eve Menu 9/9

005That dessert was the best success of my Christmas Eve dinner. All my guests had liked it.

To do it, you need : 4 cups of vanilla ice cream.

For the biscuit : 6 eggs, 7 oz of sugar, 5 oz of flour, the zest of a lemon, 2 pinches of salt, 1 oz of almonds fringes.

Preheat your oven at 400 °F. Mix together 3 eggs, 3 egg yolks (reserve egg whites), the sugar and zest of lemon. When it’s homogeneous, add the flour and a pinch of salt and mix it. Beat egg whites until stiff with the second pinch of salt. Incorporate the whites into snow in the preparation. Pour on a pastry baking tray covered with parchment paper and strew flaked almonds. Cook in the oven during 12 minutes. Put out the plate and cool the biscuit. Put some cling film inside a loaf pan. Cut the biscuit at the good size to put one in the bottom of the loaf pan. Put the ice cream on the top of the biscuit and finish with the second biscuit you have already cut at the good size.

Put in the freezer until time to serve it at your guests. When you are ready, take out the cake of the freezer and go in the kitchen to prepare the Italian-style meringue. Preheat the oven at 400 °F.

To do the meringue, you need : 3 egg whites, 3.5 oz of sugar and one pinch of salt.

Put in a bowl the egg whites, the salt and half of the sugar. Beat egg whites until stiff for 2 minutes, add the second half of the sugar and beat again for two more minutes.

Turn out the cake on a pastry baking tray. Coat the biscuit of meringue with a spatula. Make some drawings on it with a fork. Put in the oven for 5 minutes and serve your Baked Alaska just after in a nice plate.

Banana croque-monsieur

Here’s a fabulous and original dessert, that you can also eat for your breakfast! If you like bananas, you will love it.

To prepare one, you need : Half a banana, 2 slices of bread, butter, sugar, sweetened condensed milk, and cinnamon.

Take the bread and spread butter on one side of each slice. Sprinkle with some sugar on the butter. That will make it nice and brown when you grill it. Turn over the slices prepare the other side of the sandwich. Cut the banana in very fine slices and arrange it on the bread. Be sure you have covered the entire slice, especially the edges so your sandwich won’t  be dry on the edges. Drizzle sweetened condensed milk over the bananas and sprinkle cinnamon on top. Close the sandwich with the second bread and be sure the butter and sugar side is outside.

Put in the oven grill for two minutes on each side. Be careful, it cooks really fast and can turn… to burnt!

Potimarron (Pumpkin) tart

This is a fabulous dessert for the chilly autumn season. You need 1 hour to prepare this tart.

You need : 27 oz of potimarron (Pumpkin), a pie crust, 5.5 oz of sugar, 3 oz of flour, 2 oz of butter, 3 eggs, 6 tablespoons of milk, 1 tablespoon of almond extract.

Peel the pumpkin, cut it in cubes and cook it in a pan of boiling salt water for15 minutes. Drain.

In a bowl, mix together sugar, flour, butter, eggs, milk and almond extract. Then, add the pumpkin to the mixture. Crush the pumpkin with a fork until it looks like a purée.

Take a pie plate and put the pie crust pastry on it. Pour the pumpkin mixture into the crust. Put in the oven for 40 minutes at 350 °F. Leave the tart in the kitchen to cool. It’s ready.

Crème brûlée

This cream dessert is one of the famous one in France. It’s a very light and delicious dessert. You need 20 minutes to do it and 30 minutes to cook it. After that, wait 30 minutes before to serve it. To do that recipe, you need :

1 vanilla pod, 4 egg yolks, 4.5 oz of sugar, 1 cup of fat milk, 1 cup of sour cream.

Split the vanilla pod in two and get back seeds. Preheat the oven at 300 °F. Put the egg yolks in a big bowl with 3.5 oz of sugar and whip. Ad the vanilla seeds and the milk. Whip again until all the ingredients are homogeneous. Then, add the sour cream and whip.

Put the cream in individual ramekins you can put in the oven and put it in the oven for 30 minutes. After cooking, leave it in the kitchen cooler and 30 minutes in the fridge.

Just before to serve it, powder the top of the cream with the rest of the sugar and grill it to have a caramel. You can grill it with the grill of your oven or with a blowtorch of cooking. Take care, it’s really fast.

Apple clafoutis

This dessert is a very traditional french one. To make it, you need 2 T of butter, 2 t of vanilla extract, 2/3 c. sugar, 3 eggs, 1 cup of whole milk, a pinch of salt and 4 apples.

Butter a cake pan or some individual ones if you have for the best presentation. Cut the apples in slices and put it at the bottom of the pan. Melt the butter and mix it in a bowl with the vanilla extract, sugar, eggs, milk and salt. Pour this batter on the apples and put the pan in the oven for 45 minutes at a temperature of 400 °F. Let it cool and even better, serve it with whipped creme.

Hot and cold peach

This dessert is wonderful for summer time when the weather is hot, because it’s really fresh and original.You just need five minutes to prepare it (so you can do it before your guess arrived) and it will cook very slowly 20 minutes during the time you eat your meal.

For 4 persons, you need : 2 peaches, Vanilla ice cream, whipped cream, honey and 4 stalks of rosemary.

Start your oven at 350°F. Wash the peaches and peel them. Cut them in two and remove the pit. Put the peaches on an oven-proof dish, hole on the top. Put a spoon of honey inside each hole and cover it with a stalk of rosemary. Put the dish in the oven for 20 minutes.

When it’s ready, take 4 dessert bowls and arrange a peach inside each bowl without the rosemary. Put a scoop of vanilla ice cream on the top and finish the presentation with some whipped cream.

The hot and cold peaches are ready to serve.
